Produced by a collective of farmers in Tablón de Gómez, this coffee undergoes a traditional honey process with a 48-hour fermentation in mucilage, followed by slow drying on patios and raised beds. The extended drying and stabilization period allows sweetness and complexity to fully develop while preserving clarity in the cup.
About the Producers
Tucked deep in the mountains of Nariño, hours from the nearest paved road, a community of coffee growers has spent generations perfecting the honey process. This project brings together more than 40 producers who share a dedication to quality, tradition, and meticulous post-harvest practices.
Cultivated at elevations above 1,850 meters, this varietal undergoes a 48-hour fermentation before being carefully sun-dried using producer-specific methods that enhance sweetness and complexity. The coffees are then blended and stabilized in Buesaco for 30 days, resulting in a balanced and expressive cup that reflects both the region's remarkable terroir and the craftsmanship of its producers.
